Pork leg is naturally a lean cut but our pork comes from slow reared, rare breed pigs meaning it has has a little more marbling than normal pork which helps it stay moist during cooking and gives it great flavour; the crackling is amazing also!
If you have the time it’s best to slow cook the joint with some added liquid to the roasting tin to keep it moist as possible then blast with heat at the end of the cooking process to crisp up the crackling. The skin on the joint come pre scored ready to make crackling.
