This is a really great cut of lamb that has grown in prominence over the last few years. It comes from the top of leg and is tender and has lots of flavour. It works very well with marinades, the best way to cook it is to seal in a pan and then finish off in the oven until pink. Each piece is also the perfect size for one person so makes a good choice for dinner parties.
