Also known as belly ribs they are cut from the bottom section of the ribs and have plenty of meat on them. Spare ribs are a great value cut that is full of flavour and good for big appetites. Spare ribs can be grilled, barbecued, roasted or slow-cooked and can also be added to stocks and stews to add flavour and ‘body’.
If you want to eat them at their best, slow cook them in a foil covered oven tray with some water for 3 hours before adding more marinade and finishing off under a hot grill or on a BBQ, this softens the meat and allows it to fall way from the bone.
