Salt Marsh lamb really is some of the best produce the British Isles can offer. Unfortunately because of the environment it has to be reared in there is only a limited amount available and with the popularity of it increasing due to more and more coverage in the media it has become more difficult to get hold of.
What makes the lamb so special is the delicate flavour it picks up from grazing on the salt marshes which are full of flora that is unique to the area. Salt tolerant grasses and herbs such as Samphire, Sparta grass, Sorrel and Sea lavender all help to give the meat a wonderful flavour. We source our Salt Marsh lamb from Old Glasson Farm, Glasson Dock in Lancashire. The farm overlooks the stunning Lune Estuary which is located South of Morecambe Bay.
