Beef short Ribs also known as Jacobs Ladder ribs. A very popular cut in America that has now crossed the Atlantic and has grown quickly in popularity in the UK. The ribs come from forequarter / brisket of the animal.
Despite being a cheaper cut of beef it’s packed full of flavour, short ribs will absorb moisture during slow braising and the results are impressive. It’s also a robust sized portion of meat. In America this cut is often slow cooked and smoked on the BBQ for incredible depth flavour.
Each Jacob’s ladder contains three or four ribs which our butchers divide into separate ribs.
