Also known as Lamb Casserole Chops, this cut comes from the shoulder – full of flavour, but best when given the time to cook slowly until meltingly tender. As one of the better value cuts of lamb, they make an excellent choice for a hearty midweek family supper without compromising on taste.
Shoulder chops really shine when paired with bright, zesty flavours that balance their richness. Try braising them with lemon zest, capers, and rosemary, or slow-cooking in a tomato and red wine sauce for a Mediterranean twist.
