Description
The classic French sharing cut, great for special occasions or dinner parties when you really want impress. The fillet we use is from our finest, naturally reared, Galloway beef from Forest of Bowland in Lancashire.
The cut is taken from the head of the fillet meaning it is incredibly tender especially after it has been has been dry aged on the bone for a minimum of 35 days in our Himalayan Salt Ageing Chamber (click here for more detail). Our butchers then trim away all excess fat to give you the perfect sized joint for two.
