One of our more unusual combinations, designed by Roger Matthews (son of Albert Matthews). Our Pork, Rhubarb and Winter Spice sausage are bursting with flavour, most people associate Rhubarb with deserts but it was traditionally used in savoury dishes and works extremely well with pork. In 2012 this sausage reached the finals of the British sausage week awards and featured on ITV this morning. Made using ground shoulder of Saddleback or Old Spot pork, we mix in rhubarb, clove, cinnamon and our special seasoning. Perfect for bangers and mash on a cold winter night!
